Valentine’s Day, that consumer trap of a holiday, doesn’t have to be terrible. Just buy wine.

http://www.chicagotribune.com/dining/drink/ct-valentines-day-wine-recommendations-champagne-rose-interesting-story.html CHICAGO TRIBUNE: Valentine’s Day, that consumer trap of a holiday, doesn’t have to be terrible. Just buy wine. Craig Perman, owner, Perman Wine Selections: “Champagne is the perfect way to start, or even continue through dinner. One of our favorite Champagnes is from a small grower house called Champagne Georges Laval. Based in the village of Cumieres, winemaker Vincent Laval makes about 10,000 bottles in total per year. The nonvintage Cumieres Brut Nature is a blend of 50 percent chardonnay, and 25 percent each of pinot noir and pinot meunier. Laval has practiced organic viticulture since the 1970s, and his Champagnes express their terroir beautifully. This is a complex wine, not just something that is all fruit and bubbles. It has richness, depth, earthiness and incredible length. It’s an emotional Champagne for an emotional day.”

Biologico e champagne: Pepi Mongiardino consiglia Georges Laval

5 Fabulous Champagnes That Are Actually Worth Your Money

http://www.bravotv.com/blogs/champagnes-worth-your-money-bereche-bouchard-beaufort-laval-selosse 5 Fabulous Champagnes That Are Actually Worth Your Money Don’t blow your cash on bubbly unless the stuff truly sparkles. Georges Laval “Les Hautes Chèvres” Blanc de Noirs Brut Nature 1er Cru, The Laval family has history in Champagne dating as far back as the 1600s, so it’s no surprise that current steward Vincent Laval seems to have an innate knack for dealing with the tricky growing conditions the region presents. If ever there was a hard-line traditionalist, Vincent is it, eschewing nearly all modern production trappings in favor of old-school methods. His “Les Hautes Chèvres” is a blanc de noirs — white wine made from red grapes — from a single parcel of old vines of Pinot Meunier, a grape you’re unlikely to find outside Champagne. The result is a deeply complex, spice-laden wine with incredible power and density.

Georges Laval

Champagne Georges Laval dinner

http://www.oleanewhaven.com/laval-dinner/ Olea is hosting a very special wine dinner Nov. 7 featuring some of the best and most unique Champagnes being produced today, those of Champagne Georges Laval, a small grower/producer in the village of Cumières in the Marne Valley region of Champagne. Vincent Laval, proprietor and winemaker at Champagne Georges Laval, will be Olea’s guest at the dinner featuring four premier wines, and he will offer context about the wines and the vineyards, which have been certified organic since 1971 and are still plowed by horses. The Champagnes of Georges Laval have been celebrated by critics around the world and are served in many of the finest restaurants, and with production limited to 16,000 bottles per year, they are highly sought-after, often difficult to find, and deservedly expensive. Here is John Gilman’s View From The Cellar review of 2011 Georges Laval Cuvée Les Chênes: (Domaine Georges Laval “Les Chênes” Blanc de Blancs Brut Nature) The 2011 Les Chênes from Monsieur Laval is a simply transcendental example of this difficult vintage, as there is nothing “off vintage” at all about this beautiful Blanc de Blancs in the making! The bouquet is young and potentially magical, jumping from the glass in a mix of pear, acacia, a complex base of chalky soil, brioche, smoke, lemon blossoms and an overt touch of salinity in the upper register. On the palate the wine is deep, full-bodied, complex and youthfully tight-knit, with a rock..
